Lee wouldn't have survived anyways unfortunately. His arm was bitten for a while before they cut it off, and the only way to survive a bite is if you amputate the limb as soon as your bit.
No he doesn't necessarily need to die because of he bite. If his leg get's amputadet fast enough he can survive it. It just will be very hard for him to keep up with the group 1leged, when they are trying to run away from Carver.
If I had to take a guess (with the disclaimer that I am only a community volunteer moderator with no advance knowledge from Telltale), I'd take a guess and say that the release will be on Wednesday the 5th going off of past experience from other recent episode releases.

But the reason Hershel survived was because as soon as he got bit, Rick and company dragged him into that room and cut his leg off with no hesitation. Unless Pete gets his foot cut off within the first 5 minutes of the episode it safe to say he's dead.
You are right in that the wait is rather untypical, but keep in mind that Telltale didn't announce the release date for Episode 201 until the day of release (or the day before) if I recall correctly. I wouldn't necessarily lose hope yet.

So far, Telltale has confirmed the episode launches the 4th for PSN users in North America, and on PC/Mac for Steam and the Telltale Store.
Telltale is still waiting to announce dates for PSN EU users as well as iOS and Xbox Live Arcade (360).
