Why i think cutting off her arm is the wrong choice.

Walker blood on the hatchet.
Now some might say "maybe they forgot about the blood getting into your bloodstream rule" but that's not true.
If they did forget then Clem wouldn't have left out half her face if she got hit by Troy.

She covers her entire face if she never got hit by Troy

So yeah they're aware of the walker blood getting in your bloodstream rule.

I do think if you chop it off walkers will just converge on her anyway with blood spurting everywhere.
I think that she will die either way. TT made this choice with the consequences very much in mind, I believe. How will they handle her? They could take a look at the percentage of choices and choose to have the least popular be the "right one", just like I think they did for the watch. They could also have the outcome planned based on the in-universe rules and the risk of doing that in the middle of a horde, but I guess we will find out in two to three months from now.
I personally thought that it was a *very* bad moment to do so, yet I cut her arm off. I took that risk with the best of intentions (as everyone did) to try and prevent someone else from dying as my Lee had; TT are cruel masters of fate, however, and deep down I am almost certain that I have doomed the poor woman.
Hello, Katjaa 2.0. Here I thought you had more to your character.
Remember Lee waited to cut his limb off, and he used tools that were supposedly clean. It would be very hard to get time and privacy while they're running from a herd, and we don't know how far the infection could've spread by then. Odds are she'll probably loose the limb either way, and I don't think Kenny's gonna wait to find a clean weapon anyway. The way I saw it at the time, and still do, is that cutting the arm is taking a long shot, but attacking the walker is giving up. It's a horrible and possibly hopeless choice, but I stand by what I did.
The thing about Lee and his axe in season 1 episode 2 is that I don't think they fully understood the walker virus until of course it was too late.
The ramifications of the choice are: Sarita could do into a shock and then the walkers get her (if the hand is cut off). If you leave it, you risk not getting rid of it quickly enough but at least she has a better chance of surviving the herd. Either way, Sarita probably dies because the Kenny storyline seems to be a dark one and that would do the trick.
