Eating the same thing everyday would get boring, plus everybody loves meat! (Aside from the humans who don't eat meat). I don't see anything wrong with Cannibalism, just as long as the person was cooked then I would eat them. (I do agree that killing Mark was unnecessary though).
They wanted to have an overabundance of food they grew in order to trade for gas and supplies, and also pay off bandits for protection. They wanted to eat people in order to have a bountiful food supply.
Human meat gets tainted over time so they decided to eat it before the human meat gets tainted. They also had to find a way to get thoose bandits off they back
