I feel like we've met before
There are a lot of smart guys/gals on this forum so could somebody explain to me why in ep.1 Bigby says to Faith "I feel like we've met before"? Wouldn't it make more sense to say it later in the game? I don't know

I didn't read the comics, but from knowledge I gathered so far, Bigby has met Faith back when they were still living in their land, where all Fables belonged. I think something about that is written in extras in the game.
Oh, so you mean that Bigby just didn't remember exactly from which Fable she was from but just knew her in general?
I thought that maybe it was some sort of a clue in regard to the episode 5 final scene

I read the comics and Faith wasn't in any that I can remember. I didn't dig up anything that the two met each other in the Homelands (fable world). I only remember Bigby and Snow meeting up, and how Bigby freed her from her shackles.
I believe that it was sort of a clue from episode 1. Then another clue was dropped by "Nerrisa" when you first meet her in episode 2 and she says: "You're trying to place me". The echoing voices at the end of episode 5 sort of tie that in too when Bigby gets a major case of Deja vu.
Faith says (paraphrasing) "We kinda knew each other from the Homelands".
Maybe (and this is really incredibly absurd) it was just a joke referring to how we later find out that Faith, AKA Donkeyskin, had to wear a cloak made of donkey in her childhood and, well....that wouldn't be Rigby's first encounter with a little hooded girl.
If I had to guess Faith had been snooping around to see if Bigby was the man for the job. I know most people think that the girl was Nerissa from the begging but I'm with the bandwagon that it was Faith from beginning to end. And if Faith left the heads at his doorstep it was because she trusted that he would fix the situation with the Crooked man. That's why she was so sure as to say "you are not as bad as everyone says you are". The sheriff has a bad reputation but she went to see it for herself and was pleased to see it was not the case.
