What Telltale should have done with Nick and Sarah
First,I want to say that I am sorry for any misspeling here because I typed it blazing fast.I want to say that the episode was nice,but they didn't even try to do something with Nick,and if you want to kill Carlos,then give Sarah some development as a character.
This is how I would have handled them:
You find Nick,Sarah and Luke at the trailer park (all alive).Nick can help a little bit holding of walkers.Your conversation with Sarah should have had a bigger impact on her.If you chose your words carefully you wouldn't need to bitchslap her.If you choose to leave Sarah behind,Nick will say something about Pete,and that he won't leave another close person to die when he can do something about it and he will grab Sarah,throw here to Luke and the others and he'll get eaten.If you save Sarah,he'll come with you to the ruins.
At the ruins, when the walkers come you can say something to Nick like you did to Mike(help Kenny,Sarah,or bring the water).If you didn't send anyone to help Sarah she'll either stay there waiting to die or start to shoot walkers(depending if you taught her to defend herself and if you didn't she would still run if you didn't leave her at the triler park,'cause if you did and Nick saved her,she would feel betrayed by her "friend".
On the deck,if Nick didn't make it out,everything happens like in the game,except you don't tell Jane to save her,you try to save her yourself and you fail.(Also,Jane should have been too heavy for Luke and be eaten by walkers).If both Nick and Sarah make it to the deck alive,you have an option to choose to whom you give a gun,either Nick or Sarah.The one who recieves shoots along Clem while Rebecca gives birth and the other stays in the corner of the deck like Sarah did in the actual game.When the deck falls the one with the gun was closer and ,therefore saved and the other one falls.
If Sarah falls,Clem wil help either her or Jane.If she helps Jane,Nick will save Sarah.In the process he will get bit(but not eaten) and after that there'll be some moral decision on Nick's fate(Either Luke or Clem will kill him,or he'll just leave).If you help Sarah,Nick will help Jane and they'll live and you won't be able to save Sarah.If Nick falls,Clem will help Jane or help Nick.If she helps Jane,Nick will get eaten,Sarah doing nothing.If you help Nick,Jane will fall and die 'cause Luke couldn't pull her alone.Because Nick is stronger than Sarah,you'll save him(cause he lifts thst stuff too).

I would have kept them alive. Killed Luke off.
I realize keeping around a detrimental character can be complicated, but Telltale really should have just kept Nick until Episode 5 (makes it or dies here), and provide him with more lines. I'm sure it wouldn't be too hard.
As for Sarah, it's pretty astounding how many people left her in the mobile home, according to the stats at the end. I was going to say she should have not been detrimental at all, because who the hell would leave her to die, but my mind was blown. So really not sure how Telltale should have handled Sarah, as if they didn't kill her off at the end of the episode, I'm sure she would have had few lines in Episode 5, and maybe even killed off meaninglessly, just like how Nick was.
Kept Nick alive
My idea is basically what you said, but alot more simple.
Nick wouldn't have died offscreen, he would be able to reach the ruins when he made a run for it, and you would meet him there ready to go back with more help.
In the labor scene, when the deck falls the same thing happens. But if Nick is still alive he will go and save Sarah, getting killed in the process because he was shot earlier. If you choose to save Sarah, you and Nick run to help her, but Jane dies.
Nick and Sarah will be determinant, possibly getting shot in the last scene of the episode, or survive and try to make it in episode 5.
okay, well Luke develops the flu, and without any cold medication it develops to bronchitis, then pneumonia.
Those stats are the press stats, people who get the episode early. The real stats should come in any day, the original stats for Nick's death at the end of episode two was 40% killing him and 60% saving him, but that was probably the reviewers experimenting. It's now 15.6% killed him and 84.4% saved him.
I hated Nick,but I'd rather have him live,than dying like this.(offscreen)
If you had Nick alive in ep4: You don't find walker-Nick stuck on the fence. In fact, you don't see him anywhere. Clem/Jane bust into the house to find Luke and Sarah. That scene plays out the same until the skylight (Nick went to look for help/supplies/whatever). Walkers break in as the group escapes through the skylight, but walker-Nick emerges into the room and gets Sarah before she can escape (no chance to save her, whether you convince her to go or not).
If Nick didn't make it to ep4: Sarah has a chance to escape if you convince her to go, and survive through to ep5.

I did notice that it was extremely difficult to get her to come with you, i know in my play through the only way i could get her to come with me is by smacking her Carlos style.
