Although I still don't see the movies as something other than mildly entertaining, I do recognize the potential of what the star-wars universe has become now, after years of building upon it as you said very well. But it's more often than not used very poorly, almost in a gimmicky way, whether in movies or games.
Star Wars just somehow struck the right note at the right time. New generations love it for how much lore there is and how in depth it has … morebecome. Ironically, the older generations love it for the exact opposite. You were just given bits and pieces with no development, no explanation. Everybody in the movies just talked as if you were supposed to know all of this already and all the terminology. They just went nuts, ate it up, and built upon it. It was their Marvel Universe, their Mass Effect, their D&D. Something where they could just grow all these ideas and fantasies. Media may change, but we're still all dreamers.
Star Wars isn't my thing either. I wasn't a fan until the remasters.... meaning, they made the films so much worse. Amongst all the arguing, some people did actually convince me that Star Wars and The Empire Strikes Back are pretty good movies. I used to be more of a book person and now I'm more of a game person. I don't get too into movies. To me, it's just entertainment.

* The Last of Us is not a good game.
* Metal Gear Solid 3 is the only game I've ever played that I feel deserves… more all of the praise it gets.
* Stardew Valley is better than Undertale in pretty much every way.
* The Silent Hill movie was fucking awesome.
* Silent Hill 3 is the best Silent Hill game.
* Bernie Sanders won't make a good president at all. (But neither will Trump or Hillary)
* Memes are fucking annoying.
* Dark Souls 2 is the best Dark Souls game.
* Bloodborne is the best Souls game in general.
* From Software is the only decent video game company.
* I think the NX is fucking stupid.
* The PC is not the best gaming platform, it's the PS2.
* Wind Waker is the best 3D Zelda game.
* The fact that Arin Hanson sucks at video games doesn't bother me a single bit.
* Avengers: Age of Ultron was really bad.
Those are my opinions that I feel I'm SEVERELY in the minority about.

Try the expanded universe, by that I mean the comics and games. "Darth Vader and The Ghost Prison" is the first comic that comes to mind, it gives more sympathy and humanises the empire.
Here are my own (very) unpopular tastes:
* I am disinclined to read or see any comic, unless I've seen it when I was very little and de… moreveloped an emotional attachement beforehand. Whenever I try, after about 5 to 15 minutes trying to get into it, I just drop it.
* I find the manga art and its over-simplistic and over-exaggerated art style overrated, I personally fail to see the appeal.
* I dislike almost every superheroes stories out there, needless to say Marvel success is a bit of a headscratcher for me.
* This one might go better with the Telltale games crowd, but I avoid any games that heavily relies on shooter and multiplayer features despite a promising story and considering what sells now, I'm also in the minority here.

Even though I love the first two Jurassic Park movies and thought JP/// was still watchable, I absolutely despise Jurassic World. A terrible movie in nearly all aspects, but somehow a movie like this can become popular now. I don't see what all the fuss is about with Star Wars either. There were two okay movies, one good movie and four terrible ones. There are many better Science Fiction universes out there, why Star Wars of all things?
