After Shireen's death, you can see how he resents Melisandre. He doesn't look her in the eye, he pulls her away when she touches him and he ignores what she is saying. He wants her to go, but she is too devoted to do it, so he kills to birds with one stone: He makes it look like half his army deserted so that she will leave on her own and the Boltons will underestimate him. Stannis wanting Melisandre to leave also explains why those who took the horses (they could have sold or eaten them if they wanted to) decided to leave one horse behind: Stannis ordered them to do it so Melisandre could easily leave. And just after he is informed that she left, he gives the order to march towards Winterfell, as if he only waited for her to leave before giving it.

No he didn't. It was the Boltons who took him by surprise. He genuinely seemed surprised by the Boltons sending an army out to get him so soon. That was not a part of his plan. He planned to lay siege to Winterfell, but as his advisor said: "There isn't going to be a siege, Your Grace."
Perhaps Stannis' plan with the siege of Winterfell involved him sending more men away, pretending to be deserters, and eventually Stannis would disappear at the same time as he orders some of his men to pretend they defect to the Boltons and deliver Roose a Stannis impostor that he will kill or is already dead. This would have the same effect as what actually happened (the Boltons think they have won and that Stannis is dead) except fewer (Stannis would applaud me for not saying "less") Baratheon soldiers would die.
All so he can meet up with the other half of his army later?
If the Boltons think the war is won and Stannis is dead, they would keep their guard down. This is the perfect opportunity for Stannis to launch a devastating surprise attack with his cavalry, and secure his victory in the war.
How does that make more sense than half his army loosing faith in him over what he did and there poor situation

Half the army leaving, without anyone noticing, makes no sense, especially considering that they had to sneak throughout the camp and steal the neighing horses of the other half of the army.
Answer this question for me: Do you seriously think ~1300 men moving around with ~2600 neighing horses would not wake a single person as they passed by their tents and would not get spotted by a single guard?
If they had been spotted, Stannis would have been notified immediately.
And no - the burning of Shireen would not make all the sellswords suddenly want to leave. They were from Essos, where the R'hllor religion is prominent. Even those who don't worship R'hllor themselves believe that the red priests have power. Burning Shireen was a great sacrifice, and they would believe that their campaign is now blessed by a god. They would even see evidence of this before they could leave: If they want to run away from the camp, most of the snow has to go, but if the snow went away, they would think that R'hllor is with them. That would only encourage them to stay with Stannis.
Also, they are sellswords! People who are willing to kill for money and the opportunity to rape and plunder. They have probably seen much worse things in their lives than a burning child. Most of them won't care as long as they get their money, and those who care probably knows that the Boltons are worse and need to be stopped.

He would just conquer the places in different order. Once he has the Manderly fleet, he could quickly move his forces from White Harbor to Winterfell by sailing on the White Knife.

Are you sure about that? White Harbor has never been mentioned? I know that it has at least been mentioned in the Telltale series. But the Manderlys are definitely in the show. One of Lord Manderly's sons (I am not sure if his fist name was mentioned) is seen getting killed at the Red Wedding, wearing his merman brooch. The Manderlys are very loyal to the Staks and hate the Boltons. They conspire with Stannis to overthrow the Boltons in the books.

However, he is a brilliant battle commander and it should therefore take even better brilliance to defeat him. Tyrion defeating him at the Blackwater was great, since Tyrion had a really good plan. Stannis has incredible willpower (tested during the siege of Storms End) and the only way for him not being able to resist something, would be for him to be drugged.
Hes not acting in the best frame of mind, hes getting more and more desperate.
We know that Stannis has better willpower than that.

In case you don't get the last point: Stannis never needed to burn Shireen. They could have gone to White Harbor and be fine. And Stannis woud be smart enough to see this.

I'm not sure Stannis would win in the books, and if he loses, I think GRRM will have a logically consistent reason for it.
I don't have any hero worship on Stannis, he is an anti-hero and completely capable of making mistakes.
Tbh I think that Jon or even Dany may be better rulers than Stannis.
