As for Kenny's hat it is pretty much up in the air as it seems the original team who came up with the concept and plot for The Final Season and also said that his hat would not be forgotten were shifted onto other projects while the writers and majority of the dev team behind Batman The Enemy Within were put onto The Final Season. As for Clementine's Backpack I assume you mean the one she had in Season Two? It was left back at the Ski Lodge as Carver had taken the group and left their guns and other weapons behind. This is all what I think and not actual fact so take this comment very lightly

Now that I thought more about it I am sure that The Cabin Group had their weapons confiscated by Carver while Clementine met up with Rebecca and Alvin in the Ski Lodge. The only thing remaining may have been Clementine's bag which was pretty small and may not have been much use to Carver. As for ignoring food it may have been completely overlooked as Carver was looking for Rebecca, who could have went into labour at any moment, so he wanted her back at Howe's as soon as possible so she could have her baby
