That question was asked to Telltale in a recent AMA and they said that it was absolute hell to make them, because they often made edits to the story and it was hard to predict what was gonna happen and make actual scenes that wouldn't be cut.
Well they were sloppy and half of em didn't make it to the game so removing them can help the community from not getting triggered or Confused on why they didn't make it in the final product.
I hated them both, first one because I already know what happened and it was a waste of time repeating that, the second one is because I don't want any spoilers about the next episode, and also if I play that season again, I already know what is going to happen aswell.
I don't mind "Previously" so I won't answer about that though I think they're still using those. "Next time" well you really have to ask? Telltale constantly made changes to the story, gameplay or how the scenes play out in the next episodes so I guess it was pain in the butt for them to listen to fans whine about how they rewrite story or create an episode totally different from what they advertised before.

Really bro? Done Running was fucking amazing, two and a half hours long, a new and very well done visual overhaul, unscripted combat, and a shit ton of hubs. I think they had enough on their plate. Not having a “next time on TWD” makes complete sense and does not make Telltale “lazy”.

And it was NOT because they got lazy. They did it, because they had to use resources to make them instead of putting said resources into something more important, like polishing the game or working on the next episode right away.
They were also awfully optimized most of the time and ultimately unnecessery. I hope they're gone for good.
Unpopular opinion: I loved the Next Time segments. It's so interesting to see the changes made in the development process and it's a nice quirky thing, albeit not something very professional.
Dammit Telltale, ya better make that documentary for TFS like with S1, not just a blog post!
It was so cool to see Mark Darin's enthusiasm with the project and Jared Emmerson Johnson's in-depth values and processes when crafting his music for Ep2 and 3. Good times man.
