I've played through it two times. Once following the majority of the people's choices, and another doing everything opposite. I want to see how the two are different.

If you play from an already saved game, It'll rewrite what you've done. So if you want to start a new playthough, either pick a different save, or sacrifice one you already have. Does this answer your question?
If you want to play again but not overwrite your previous save, then when you're on the episode selection screen, Hit X and it will allow you to change your save slot, then you can start a new playthrough.
yes thank you, so if i want to play again i can either start a new game and delete my other one or can start without erasing my previous one? sorry im kinda slow

I've played it two times now. I'll go for the third later in January, I've had enough for this year. Then maybe a fourth one in February before EP2 comes out.
I've played the episode 2 times, and my brother used up another slot.
First slot is my blind run.
Second slot is my younger brother's.
Third is going to be a continuing "side with Kenny" save, I thought he was dead up until the tease for episode 2. He's got to be alive. I'm going to play this shortly before episode 2 releases, just to give myself a refresher.
My fourth is a "Side with Luke" game importing my blind season 1 save. Based on how you interact with him more than any other cabin member, I have a feeling he will be around for all 5 episodes (then die horribly). At the moment, its almost identical to my blind play-through.
Only two so far. Had my first canon run-through, and the second time choosing the same decisions and dialogues so I could just get a feel for the characters and the plot.
I doubt I'm going to play another run choosing 'bad' decisions and 'edgy' dialogue options as Clem. I just can't make those decisions as her.
