I wondered the same thing. It seemed he knew enough about suturing to comment on Clem's skills in that area, but I think that he could have done much better in identifying the bite marks. I kept thinking that they could have just taken a piece of food from inside the house, and had one of the other group members bite into it so that they could compare it to the teeth marks on her arm.
All the tearing that comes with a latching bite, you wouldn't be able to tell. If anything the bite in the game wasn't realistic enough to show how messed up it would actually look.
