I don't think its reused assets. That stuffed bunny represents something or is a easter egg or something! It looks so beautiful and brand new in s1... Then s2 its destroyed in the shitter (litteraly) just like clems life.
That one bandit also saw everyone, including Clem and her iconic hat. (the three of his squad were the ones holding everyone hostage).
While it does seem far fetched that he would remember those specific details, remember this: on that day, his 20 something strong group, which he may have had friends in, got slaughtered by Lee/Clementine's group (at least that's how it looks from the bandits perspective).
Also, those suckas didn't pay him, then they bust a cap in his ass.

Jolene's daughter was raped and killed, hence she
didn't live long enough to be darkened and scarred. Clem survived, yet has to continue living through absolute horrors. A double edged sword, the innocent either perish or live long enough to be corrupted...

I remember Lee putting a 9mm in the approximate area of that dudes kidneys. He wistles for help but I don't think he's survive that if he's the last one left he'd bleed out, and if any survived especially as any surviving bandits would be pissed at him for getting most of them killed, and it's already established they are cannibals.
