Rock of Gelato = Rock of Gibraltar
Not sure if anyone has brought this up yet, but, along with possibly being a nod to Dominic Armato's love of good Italian food, the "Rock of Gelato" is likely a pun on the Rock of Gibraltar - a place known for its monkeys.
