If you could choose only 1 character to make an appearance in Chapter 2...
Murray gets my vote with Stan following up. They both got their mention in the game but didn't appear lol.

Of the above choices I would vote for Cpt. Smirk, but voted instead for "some other character" as I think new characters would be best for chapter 2, until an old island is revisited

I would like to see them in the trial scene. And yes I guess their will be a trial scene with the competition and all. I bet we have about 4 second clips of various pirates saying a single line. Seeing all these characters would be great.
But for Chapter 2?
Well a cameo from another Telltale game would be good. Kate Capsize or Wally.
I mean just look at what retirement has done to them! Okay they're the same as before, but that's why we love them right? Okay I love them, but honestly, those were some great characters Lucasarts shoved into the closet there.
Men of Low Morale Fiber would be good too actually but I wouldn't be heartbroken if they weren't in it.
I would like to see Largo and the Men Of Low Moral Fibre (Hereby known as MOLMF :P) and all the rest, they're great characters. I don't know if I want to see that doctor again, his makeup makes me feel a bit ill!

I want any return characters to be really in-place where they are. That means that people like a shopkeeper on Melee Island, or a barkeep, or somebody like that, is absolutely pointless on a new island on a new story.
That said, I can see characters such as Stan, Murray and the Voodoo Lady in any new game because they're traditionally drifters with no home-location per-se. Kate Capsize works here for me, too, because she wants revenge and there's a bad lack of female characters in Monkey Island. She has a motivation to have moved, whereas other characters would have to have motivations invented especially for moving them, which seems too contrived. I'm enjoying seeing new guys like Nipperkin, Winslow, etc. Even if the portrayal of them in the ToMI artwork-style isn't great for making them memorable (i'd love to see some of the concept art). The pirates of low moral fiber are the perfect throwaway for an empty-looking street corner (that's effectively what they were in MI1 and MI2) and are effectively drifters, so they would compliment the new cast.
Largo, for me, had his day. I don't want to see him until LA have done their take on him, because I would feel safer having LA cast voices etc. due to their larger budget. Largo could work in a few instances, but he's really a small-boss to the big-boss LeChuck and therefore I feel he was a superb character in MI2, and one of the differences making it the best MI ever, but not particularly a stand-out character if you take him out of his original environment.
Just my personal view on it.
Failing that, Men of Low Moral fibre could be amusing for old times sake.
