How do I fix this?

The same exact thing has been happening to me!
Same here, infuriating. My son used his Christmas money to buy this and turned it off in frustration after 5 minutes. What a joke.
It seems to be a common problem for Minecraft, for me it was bad in ep 2, the rest was fine, I also didn't find it so bad it was unplayable
I Play it on the 360, too, But i Never had any Problems with Minecraft Story Mode, surprisingly. Sure, it has stuttering in some Action scenes, But it was NEVER As bad As in TFTBL. It wasn't even that noticeable in retrospective. It's their most polished (modern) game to Date.
It is not perfect, but it is now about 95%fixed, which makes this playable.
The secret? Well, you watch your ten-year-old fire up the game and quickly click cancel on the "this APP REQUIRES AN UPDATE" screen. Next, you say, "wait, what was that? Exit the game and start again." You then demonstrate how to click on download the update. Wait ten minutes and boom, much better!

I just assumed my daughter would apply updates.
