Because Walking Dead and beyond has content (whether it be violence, language, and sexual themes) which is not suitable for a younger audience while most of pre-Walking Dead didn't. And not everything they do now is M and not everything they did before Walking Dead was E or T. Minecraft Story Mode is rated E10 and the CSI and Law and Order Games were rated M. Like any other game, the rating all depends on what sort of demographic the content is appropriate for.
Irregardless of ratings, Telltale just wants to focus on finding universes with good story telling potential - be it family friendly or gritty and adult. Sometimes, they get experimental and try weirder concepts like Tales from the Borderlands, Poker Night, or Minecraft: Story Mode on the side as well. But, for the most part, they frequently mention that they want to find franchises with compelling characters or sets of rules for a story to function in.
After the success of Walking Dead, Telltale wanted to continue broadening their horizons with more stories that focused on mature interpersonal relationships, but they are not a one trick pony.
