This seems like such a non issue to me. It's still the Christmas holiday, regardless of whether you celebrate it or not. I just don't see how it's offensive. If I was in a Muslim or Jewish majority country, for example, and they wished me Happy-whatever-their-holiday is, why would that be a problem? I certainly would never be so entitled to except them not to do that.
I'm an atheist and i don't have a problem with Merry Christmas. I really couldn't less about origin of Christmas, all what matters for me is that the person saying it is simply trying to be nice.
Though, it's worth to mention that i grew up in catholic society. I still don't think i would care about it if i grew up in other culture. In general, i don't really care about culture, i simply happened to be born in this place and not the other. No matter the culture, people are the same wherever you go, and even though things like taboos, greetings, holidays etc are different, we are all just human.
I'm still gonna say "merry christmas" to people regardless of their religion. Even if you don't celebrate it because of your religion, you don't have to get so butthurt at someone just spreading some joy. The phrase still means well, and anyone who actually gets offended about someone saying it to them needs to get that stick out of their ass.
