Would The Legend of Zelda: Breath of the Wild scratch your itch? I find that game pretty fun.
It's not open-world, but "Unravel" appears to be the most relaxing single player game made for this generation.
I don't know if counts as "open world", but South Park: The Stick of Truth is pretty fun, if you're a fan of the show.
I'd consider it open world, personally. I definitely agree with your recommendation of The Stick of Truth because it's super lighthearted. Could be considered inappropriate at times, but it's a lot of fun and among my top three games.

Thanks, but the physics and how many objects that are interactable are really ps2 grade.

Flower isn't technically an open world game, but it is a soothing experience if you ask me.
My sister has been playing a game called shelter, which is about playing as a badger and surviving in the wilderness. I've played a little bit and it seems relaxing to me.

Waterfall Canyon
Oblivion (story isn't that lighthearted but wandering through the wilds of Cyrodil is wonderful)
Final Fantasy X-2 (only semi-open world but fits all other requirements)
I played a game on xbox360 called eternal sonata that was nice and chill and the old inazuma 11 games on the ds were fun and simple you go to different cities on a bus so its more hub based I haven't played any newer ones.
I had a different game called shelter the children starved so the adults had to eat them. I do NOT recommend (ps4)shelter to people wanting a nice relaxing afternoon.
O-O What kind of fucked up game is that? Lol the game I'm talking about stars cute animals so I hope they're not the same game. I haven't played a lot of it but it seemed relaxing from what i played.
Its like a post apocalypse type setting with sims style guages over peoples heads
Its set in a fallout shelter you can dig new floors for the shelter and build beds, a garden, a van ect send your people out to get supplies it is pretty good fun when people dont die

Okay, I'm sorry if I did not phrase it properly. You realise older games are all plagued with the same exact thing. Eg. Keep running towards a wall and your hands will go through the wall and come out again because the animation does so.
I'm not expecting Assassin's Creed grade interactivity where even if objects are not interactable, the hands still touch the wall, instead of going THROUGH it.
I will definitely check that out.

Well I'm not sure your problem has to do with physics so much as it had to do with the animations or inverse kinematics.
Anyway, I'm like 99.99% sure your problem isn't really present in Breath of The Wild. In the open world, if you run into a wall or a tree, Link will almost immediately begin jump up to climb it. Inside houses Link will instead simply not walk into a wall, even if you keep pushing the analogue stick in that direction.
A game in which the physics play a big part in the gameplay, also had PS2 tier physics. Right.
