Other than a bit of different dialog at the hotel in the beginning of Ep 3, did the decision to steal the food from the car really matter?

Clem could either praise Lee or criticise Lee to her parents, based on the totality of his decisions.
By the time of EP. 3 you're back to raiding Macon for more stuff. So I'm not surprised the station wagon looting isn't of much importance later by the beginning of Long Road. It was more immediate than that.
I think that's if they find her parents. I'm sure there will be some sort discussion but it will revolve more around his criminal past.
