I can see that especially how he keeps his wife's head in a bag. My theory is that at each night until his demise, he would pull out his wife's head from his bag and let her nibble on his ear a bit. By letting her nibble on his ear for a quick second, there wouldn't be enough of the virus to infect him, but enough to slowly build up an immunity.

Exactly! Maybe Telltale should make a crazy character who either experiments on himself or how the people he acquired in finding a vaccine for the virus.
Heck, maybe "Safe Haven" is such a place, and the reason why Tevita is scouting for good survivors. If the vaccine works on a good patient, the patient wouldn't use his/her new found immunity on evil.
