A bit disappointed with ONE thing in particular
I know everyone is saying "it's too short" or "I can't believe she was only dead for 2 seconds" but I have an issue with one very particular thing. I thought it was so cool that the story in Episode 1 suggested that Bigby calms down from his near-wolf form by taking a heavy shot of alcohol. I thought that was an awesome mechanic that could have been used later. But now that he goes near-wolf again (for maybe 10% of the abuse he suffered during the Grendel fight) and turns back nearly instantly, the magic is gone

Right, now that you mention it, I also disliked that. Suddenly he was hairy and then he was suddenly normal again. I had the feeling that he only transforms, if he's pushed really hard. Here it was done rather badly.
Well, in his defense, I think Beast freaking out and trying to kill him warranted a touch of wolf mode. The dude ripped a pipe out of the wall and started swinging it at him, for crying out loud.
I didn't really mind that Bigby changed so quickly. Like you said, it wasn't as much of a full-out brawl as with Grendel, so I think it makes sense that it didn't take as long to cool off. It could have been handled a little better, but it wasn't so bad that it bugged me or anything.
That being said, I did notice that Beast never went back to normal. Even after everything calmed down, his horns and eyes were still beastly for the rest of the episode.
Well, it makes sense with the comic's logic. Bigby can control quite well his powers, yeah, maybe when he is pushed he turns more easily but it's not like he can't control himself. Beast on the other hand depends entirely on how well the love between him and beauty is going, and thinking she might be cheating on him is not something easy to swallow.
Beast works a little differently. He'll turn more "beast"ly when Beauty is mad/upset at him. He has to hide it with a Glamor when this happens. I can't remember exactly the reason, but Bigby can transform back and forth at will due to a dagger that Snow gives him or something when he first came to the mundy world.
I'm glad they resolved the Snow thing quickly... it was pretty well known that she couldn't really be dead, so why drag it out?
About the Beast fight vs. the Grendel fight: versus Grendel, Bigby was genuinely enraged. Grendel was being an A-1 jerk to him, gunning to start a fight and beating the crap out of him until he lost it. Beast, on the other hand, is a decent guy who understandably jumped to the wrong conclusions, so while Bigby does get pretty rough with him, he doesn't have the same level of animosity.
