Lee's. The walker bit him and some of the blood splashed on Clem's hat.
That makes it darker then. A constant reminder that Clementine will never know that she carries every day.
Hmm, I never thought about it that way. It is interesting, really.
Well, we can argue about that there isn't Lee's blood on it anymore when he gave it back to Clementine, so it could be just random walker blood that's on the hat.

Walker blood is brownish and sometimes greenish. When Lee picks up the hat after getting bit it looks freshly red.
When Christa asks who's blood is that, Lee says its mine, shows her the bite. It will be his blood because he was holding the hat
so clem is wrong, lees blood isnt on her hands, its on her hat!
