I think it'll all be fine considering in the whole "Next time on The Walking Dead" segment he's shown to be pretty calm around Clem, and still sounds concerned when she mentions what he did for her. By then he should know about the arm thing, so I'm assuming everything will be fine even if he starts off kind of pissed.
yes, he may be angry at first, but considering Duck died from a walker bite Kenny will probably realize that cutting of the hand immediate in order to stop infection was the right thing to do. Sure, Clem's action was brash, but Sarita would have been sure as dead by the time they got away from the walkers and found somewhere to preform the amputation.I mean, just look at Lee, it didn't take that long for him to be fully infected. At least now you give her a chance, no matter how small it is.
I think the moment he learns you only did it because she was bitten, he'll calm down and realize it's just like the situation Lee had way back when he got bit.
...Come to think of it, Kenny (judging by his reaction when Clementine explains Lee using walker guts to "mask them" to escape the Marsh House) hasn't learnt about wether cutting the arm off worked for Lee or not. Maybe he'll ask about it next episode?
Kenny was the first person to suggest chopping off limbs back in season 1 so he'll understand even if he's upset because Sarita still needs medical attention and it sucks that Carlos died.
Reggie had his arm cut off remember? Before then the only character was some cousin of Pete's and we never see him. I think Reggie was just a way for the both Clementine, Kenny, and the player to know that amputation works.

I'd be more concerned about whether Sarita herself would understand. Certain things she said this episode (and in Ep. 2) makes me think she might not be as appreciative of Clem making that decision for her. I personally didn't have Clem do it for that reason and figure at least she'll get to say goodbye to Kenny without worrying about her dying due to blood loss.
Kenny I found was still very concerned for Clem's safety despite her not sitting with him in the previous episode which I think is a good sign for his ability to forgive her if you did go through with it.

Also, Kenny is not exactly the understanding type, even before Katjaa and Duck died. I think it's damned if you do damned if you don't.
