I'm not sure if it was a dialogue option, or just something Lee was originally supposed to say. There's also a line from Kenny which I believe is meant to be in response to that line:

So, there was an old interview from years ago with Gary Whitta, I believe. He mentioned that originally, the choice to kill the zombie boy in the attic wasn't as somber; it was more frantic, with the boy slowly crawling towards Lee and Kenny, if I recall correctly. I can't remember all the details, or even where he said this, but I know for a fact that it's out there somewhere. Might have been on the old Playing Dead talk-show thing they did. At any rate, the game files seem to confirm what was said-- the scene was indeed different.

Apparently, Rashid and Vanessa were supposed to have a baby and Telltale just reused AJ's model for it.
He's not the only reused character in that Miniseries.
That baby does show up in the game, though, as well as the Vanessa model. You run into her and her baby if you go after the footsteps instead of answering the phone in episode 2.
And if memory serves correct, that baby was actually meant to be seen at Monroe. And since Monroe gets burned down... I guess I can see why they decided against having a baby on screen there.

There's that corpse that uses Pete's model as you mentioned, and the dead little girl you see if you go through the window is based off of the model of the zombie boy in S1. There's another dead boy in the ferry who uses it, as well.
If you smash Greg's face with the pipe, he uses a modified version of the texture for Carver's smashed face.
Then you have the walkers, which as you'd expect are pretty much reused every single game. Although Michonne added a fair amount of new walker models, and added more randomization/variation to the older S1/S2 models. One particular reused zombie you might possibly recognize is at the beginning of the first episode. There's a zombie in a business suit that Michonne kills, which is the same zombie that shows up during the Winston chase in S2. The one that gets stuck on a tree stump, and you push Winston into it.
I found a bunch of Michonne stuff myself the last couple of days, and I might make a video about it soon.
And yeah, the baby was originally from Monroe, the model is called BabyVanessa but the texture BabyCrabber (Crabbers = Monroe people).
And Vanessa actually shows up in Episode 1, just unnamed and "written out".

It's kind of ironic how the character that's arguably the most important/useful member of the cabin group (in the sense that he's a doctor) also has the least amount of backstory.

In the past, I've been of the assessment that that may have been somewhat intentional for the Cabin Group as a collective whole, as Season 2 seemed to be going for a feel of mystery and uncertainty regarding them and Carver. There's generally some sort of ominous hints or incomplete statements leading one to speculate what most of their deals are, with the notion that their running away from the pasts and the mistakes they've made.
Carlos is a/the perfect example of that, if the bouts of unanswered foreshadowing is any indication.
It's kind of ironic how the character that's arguably the most important/useful member of the cabin group (in the sense that he's a doctor) also has the least amount of backstory.
Didn't Clem say her mom was a doctor and her dad an engineer? Based upon my small bit of knowledge regarding Northern Virginia incomes, adjusting that income for what I think would translate to an Atlanta, Georgia suburb, and assuming Clem's folks were well seasoned in their careers but on the lower end of the pay range (a.k.a my assumptions are in no way accurate), you're looking a dual incomes at probably around the $70-75k range per parent. If they were government employees, you're probably looking closer to $100k per parent.
Not that having two microwaves means you're stupid rich... My folks used to have two: one from the 90s and a built in one from our current house. Ol' 90s microwave sadly kicked the bucket several years ago.

The facial animation issues with Fern, Clint, Lingard, Rafa, and the Specialist was already a thing for about a year now, so I'm guess it may have to do with how certain determinant factors are selected and prioritized.

I didn't really notice any changes for the early parts of episode 5 at least, after downloading the update on PS4. Still seemed as janky as before to me, was hoping it'd at least fix Fern's facial animations, but nope, after David breaks her arm her facial animations also cease to function properly. I'll test to see if Tripp will still appear even though he died in ep4 or if Javier can still die at the hands of an invisible walker. And maybe I should replay episode 4 just to let Conrad die there, to see if Kate's face still becomes all kinds of derpy once you tell her about it.
