Does teaching Sarah to defend herself make any kind of difference?
I am assuming it doesn't especially with how linear this season is but I don't want to replay to find out. I thought that her knowing how to defend herself would be a big deal in S2E4 but it appears like its not that significant.

No and honestly clem showed her how to hold it ONCE for about about 2 minutes. At which time Sarah was messing around and not listening I really didnt expect that to affect anything.
Clem honestly didnt teach her how to shoot at all, Sarah didnt fire one bullet, clem didnt evn have the courage to do it at first either back in season 1

I think it was just a way to sneak a reference to Lee in.
Where was the first season more varied? And don't give me carley / doug, the barely did anything in the second episode. Wether you save Duck or Shawn in the first episode does not matter at all. Wether you steal the stuff at the end of the second episode does not make a difference at all. When you let Lily stay in the group, she leaves a few minutes later.
The choices don't really matter in the end.
