I agree with some of your points. The 400 days characters were wasted. Carver was wasted in episode 3 after being so great in episode 2. The way they treated Nick after you save him felt lazy. I know determinant characters always die, but sometimes i forgot he was even there. He must have had maybe 4 lines?
As for Kenny. I hope they do something better with him in episode 5. We've seen him arguing a lot and struggling to cope with grief in season one. Given they had to stretch believably pretty thin to bring him back (now they might bring Lilly back too!) i'd have thought they had something bigger in mind for him.
As for what i disagree with. Finding Christa is probably still a goal for Clem. Wellington is the only place she has a realistic shot of finding her, and perhaps a chance at long term saftey as well. Just think of the Carver stuff as a detour in that path much like the motor inn was to the season 1 goal of finding her parents and for Kenny to get a boat.
I though the character of Sara was fine. She was there as way to pose the question to Clementine of how able she is to protect people that aren't protecting themselves.
And Clementine's personality is largely up to you. All the things you mention are all optional. it would be pretty boring if they gave you three identical options that were all super nice and polite. Seems your issue there is that you'd rather she be an NPC.
