Do I need to have read the books/watched the show?
I don't care for spoilers for the book or show, so it's okay if the game reveals plot points for them.
I'm just concerned if the plot is written assuming the player has seen/read GoT and doesn't explain any important references.

No, you don't. You're gonna lose some references, but not important references, I think.
You dont have to, but you'll probably be confused by most things, it kind of assumes you know the world at least a bit.
