Albert said he didn't know when it is in order to see Bernard's reaction, and used that to his advantage:
Bernard has figured out that the month isn't May or June, because Albert told him that he won't be able to figure which month it is, and he would've guessed it immediately if it was either the 19th or the 18th, because they only appear in specific months. This means it wasn't a month with an exclusive day that only appears in that month (i.e. May or June), so we can cross those off the list.
We also know that after deducting those two, Bernard has managed to figure out which month it was, and that by knowing this fact, Albert could deduce the remaining days and find the correct date as well, which brings us to this conclusion:
Since Albert figured out which date it was after Bernard had figured out which month it was, it must have been either July 16th, August 15th or August 17th, because only those don't appear twice on both months, and he wouldn't have been able to figure which month is it if the same day appeared more than once. After deducing this, Albert had figured out the day, because he knew that if Bernard was able to figure out which month it was, then it must be the sole month with only one option for a day, that is the month of July.
Albert and Bernard just became friends with Cheryl, and want to know when her birthday is. Cheryl gives them a list of 10 possible dates:
… more May 15, May 16, May 19, June 17, June 18, July 14, July 16, August 14, August 15, August 17
Cheryl then says, "I will now tell Albert which month I was born in and tell Bernard which number day I was born on."
She whispers these to them separately.
Albert then says, "I don't know when Cheryl's birthday is, but I know that Bernard does not know either."
Bernard says, "At first I didn't know when Cheryl's birthday is, but now I know.
Albert says, "Well, then, now I know when it is, too."
When is Cheryl's birthday?
Yup although when you say it like that I can't help thinking of some tragic accidents that happened with that recently. Although did you ever hear about the woman that happened to, but because she fell on some red fire ants nest and got stung hundreds of times, that shot her full of adrenaline that might've actually saved her life.

@MetallicaRules Here's a much harder version of the Einstein riddle, it took me about 2 days to solve:
Eight married couples meet to lend… more one another some books. Couples have the same surname, employment and car. Each couple has a favorite color. Furthermore, we know the following facts:
* Daniella Black and her husband work as Shop-Assistants.
* The book "The Seadog" was brought by a couple who drive a Fiat and love the color red.
* Owen and his wife Victoria like the color brown.
* Stan Horricks and his wife Hannah like the color white.
* Jenny Smith and her husband work as Warehouse Managers and they drive a Wartburg.
* Monica and her husband Alexander borrowed the book "Grandfather Joseph".
* Mathew and his wife like the color pink and brought the book "Mulatka Gabriela".
* Irene and her husband Oto work as Accountants.

Yeah, I already worked it all out before posting that. I was just showing the method I found to work the quickest for me. Once all the information is transferred into table format, you just start overlaying the columns until everything fits into eight columns, like a weird jigsaw.
You're doing great, it gets tricky after you use the more obvious hints that give you the direct information.
I'll tell you this: You will need to make assumptions and see if they makes sense.
