I think it somehow adds to the fact that ep 4's raccoons had a special meaning, althoguh I am not sure what it could possibly mean.

That raccoon is actually named Lori and it survived the entire apocalypse and you end up seeing her in season 2 episode 4. True story. The difference from a certain television show Lori is that the raccoon gives a shit where its children are...
I think they already had raccoon models and it's just more presumed symbolism.

And then we've got that family of raccoons in Episode 4. So yeah, I think this is supposed to be foreshadowing. They're probably hinting at something that'll be in the ending.
You know... In some culture, somewhere and from some time period or age, raccoons represent something.

I think that's what most symbolism is. Authors will include something seemingly important and fans will go apeshit to try and find hidden meanings. You can find "symbolism" in real life, if you look hard enough.
