If I had to guess, the design team did that to make it stand out instead of having it red or flesh colored. Plus it's more of a silvery blue so it kind of matches the original borderlands logo...

I think it's how Jack seems himself now. He isn't an actual hologram, just a projection of his own consciousness. The mask is a part of Jack as much as his original face was. His mask is who he is now.

anything eridian is pretty unnatural, the gurdians they create has purple blue-ish blood. we havnt fought an eridian though so i dont know about them
