Biology and organic chemistry, biology is simple but I hate chemistry
I could choose physics instead of chemistry but Quantum Conundrum is all I know...
Shiki was so good! (although the character design was like two people with completely different art styles were each given half the cast)
It's not really vampires, but Ghost Hunt was also written by Fuyumi Ono. Has a similar...worldview, I guess. The books go further than the anime does, which kind of kills me.
Thank you. Hellsing is fantastic, extreme yes but pretty much any vampire story is full of blood.
I've finish watching Shiki and loved it. Honestly is hard to find a good anime on vampires.

… more It's not really vampires, but Ghost Hunt was also written by Fuyumi Ono. Has a similar...worldview, I guess. The books go further than the anime does, which kind of kills me.
As far as the worldview, Fuyumi Ono consistently writes about fantasy subjects without much camp and a slow build on the suspense rather than jump scares. The Ghost Hunters believe in ghosts and the paranormal but also believe most of their clients are ignorant or lying. I don't want to spoil too much because part of what I liked about this and Shiki was the slow build of the universe.
...That being said, the first series of books drops a major plot twist in the last book, which the anime never covered. I don't know if they knew they weren't going to do a season two and didn't want leave things that way, or what. There were also two more books after that which were never covered.

I like Sayonara Zetsubo Sensei, but I'd have to know the sense of humor of a person before recommending it. (Also, the anime really went to town with the fan service, unfortunately.)
I have a different taste in anime I think. I often suggest stuff others don't seem to. Some of my favorites are just not everyone else's favorites.
Emma: A Victorian Romance A Victorian Love story obviously, one that the people working on it took seriously as well. When I mean serious they took the project itself seriously. It isn't plagued by stereotypical problems that a lot of anime have. Actually think this entire series is legally on youtube. I have it on DVD so meh. enter link description here
Allison & Lillia Oh Gosh... adventure, airplanes.... 1930-1940 European Period setting...... yes.... yes.... YES! enter link description here
Moribito Guardian of the Spirit If it wasn't for Adult Swim, I likely would of never even heard of this one. Nice having an anime with an adult women as the main protagonist that isn't turned into a sex symbol. Better yet she doesn't even use a stereotypical weapon, I mean a spear... a spear, 99.9% of anime gives the protagonist a sword or a gun. Though it wasn't the grand story that I loved, but the story about the protagonist's life before the events of the show itself. They talk a lot about her past and I love every single second of it when they do. enter link description here
Read or Die What happens if you take X-Men, James Bond and then combine it with the Librarians. You get Read or Die. Ya just by that statement it's already automatically awesome. OVA and TV show are both nice.. being an early 2000 anime though the TV show doesn't fit most people's standards of animation quality, but it still shares the amazing sound track from the OVA, characters are all wonderful as well. enter link description here
I think I will stop suggesting now... I couldn't help but find videos for all of them. I could Suggest more, like You're Under Arrest, Mobile Suit Gundam, I could make a mile long list personally. >.<;;;
Oh Screw it... Edit!
Girls und Panzer um....Girls and Tanks? Points to the title pretty much explains it all. I'm not a fan of Moe, but seriously, one of the best shows ever. It is just pure fun. Everything, literally everything in this anime is just great. I mean what other anime will reference films like the Battle of the Bulge, The Great Escape. Kelly's Heroes, and while at the same time having a lively/memorable musical score almost always playing, with giant metal machines that blow stuff up? None I say! It's also a rolling war museum. enter link description here
Sora no Woto Another one of those rare cases in which I enjoyed a moe anime. I always tell people if they love Ghibli films this OVA short series is right up their ally. Just not the same art style of course. But it just felt like one of their films a number of times. Well mostly during atmosphere building scenes. enter link description here
I liked Victorian Romance Emma, and the manga are just stunning. Have you read Bride's Story? (The titles sound so...shojo, it's really hard to convince other people these are really well researched historicals with only some romance)

I'd like to add "GRIMGAR OF FANTASY AND ASH" to my list of recommendations.
It's about a group of people who find themselves in a fantasy world with their memories erased. Unlike anime with similar themes (SAO, Log Horizon, etc), Grimgar's cast are neither experienced or particularly skilled at combat. It's less of an action and more of a "what actual people would be like if dropped into the scenario". So something as basic as killing a goblin gives them difficulty. It's fairly slow-paced, which might be a turn-off for some, but the characters are very likeable, their struggle feels real, and the dialogue between them is great (very natural and realistic).
Its really good all the way through. there is really the only anime I come across that doesn't have any fillers episodes. you will be really happy with this series.

My favourite anime at this time has to be shokugeki no sōma (aka Food Wars!) If you like fighting and warrior anime this is probably not for you, unless fighting with food counts It's really good you should try it, each character has their own story and skill ^-^

Physical Chemistry is where my brain put up the little white flag (didn't help that lecture was at 8am).
It's like Quantum physics and chemistry had a baby, and it spoke a language only it could understand.
It's on Hulu and Netflix atm.

I heard of it, but I'm just not a fan of manga.
The inkwork is just insane. The emma manga was the same way. Kaoru Mori is so talented.
I second Shiki. I'm only six episodes in but it's really good so far.
Sturmgeschütz III assault gun wasn't used in the Winter War.

Likely meant the Continuation War.

Good to know
Well, I got some anime:
The Melancholy of Haruhi Suzumiya (series) [I will admit, it does get a bit weird sometimes, but what anime doesn't?]
The Disappearance of Haruhi Suzumiya (movie. Watch after the series.)
Cowboy Bebop (series) -Cool Space Western
Trigun (series) -Another Space Western
The Girl Who Leapt Through Time (movie)* -Time Travel type movie
Summer Wars (movie)* -Family kind of movie. Has good action bits.
Wolf Children (movie)* -Nice, heartwarming movie.
*Movies by Mamoru Hosoda. He's going to be the next Miyazaki, I'm sure of it.

And for love of god, if you insist watching English dubs instead of Japanese ones... Stay away from Yu-GI-Oh! stuff. Cringe...
I'm starting to think Mori likes people sitting on floors with pillows. hehe
