Are these games REALLY worth the replay?
The outcome, more or less, is scripted to a certain point e.g how Lee will ALWAYS die at the end of TWD S1. Your main influence in the game is choosing who dies, who likes/dislikes you, and a couple of dialogue changes, but is that really worth a replaying the game for?
Before someone says it... Yes, I know the games are more about affecting the people around you and not the actual "main" events, but do such small changes really make it worth a replay if you already know what's mostly going to happen?

For some people (me also) yes but it's a personal thing.
It's about the journey, not the destination
It's like reading or watching a really good book/movie. You come back to it not for the choices but for the story and character's. Maybe this time you decide to take a slightly different path with a character, but you still get to experience all the funny, exciting. tense moments you experienced before just in a slightly new way.This is why Telltales stories vary from movies you get to be the character and decide how they act. Sure your going down a linear path but you get to decide how you want to act around others in this set path/story
I would just rather watch a youtuber play it rather than replaying it. And since I already played the game, I know where to skip to see their reactions :]

You're standing in front of some stairs that are publicly used and frequented. You know what's at the top and at the bottom, who regularly uses those stairs. You've climbed them what seems like a million times. Will you walk on the right or left side? Will you hold the rail? Will you start with your left or right foot? Is there anything new about the staircase? Perhaps a fly, a piece of gum, a piece of garbage that wasn't there before? How about the people? Do you just walk past them and remain a stranger? How many stairs are there? Watch others climb them or try something different like going up on one foot, or while doing something.
What I'm getting at is yes, at least for me.

I usually replay a game like this about 4/5 timesto find anything hidden or missed
It is for me. I've got 50 hours logged in GoT already and 18 in TFTB. Spent easily 20 hours on TWAU and at least 30 on TWD S1/2.
I really love having those "flawless" playthroughs though.
I played TWD S1, TWAU and TWD S2 twice, three times and twice respectively. I also watched them on youtube.
You know my answer.
