I think I might know who Carver is beating up, and it ain't pretty. This is based on the achievements for Episode 3.

One of the later trophies is "Rehabilitated" - "Gave what you got", with the image of a bloody crowbar. So it seems like Carver might be beating up Clementine, and she later gets her revenge.
I think even for the games it would be a bit extreme to see a fully grown man beating up an 11 yr old kid and the image looks more like Kenny or Carlos to me. So I can see maybe Kenny and Clementine getting captured, Kenny getting beaten up (and maybe Clementine gets roughed up a little bit) and then later both of them getting revenge on him.
I don't think they will fight eachother... Untill Carvers says Sarah you win your daddy lives or Clementine wins and your Kenny life... Don't think Clem is going to kill Sarah and find a way to escape with everyone
When you look at the "committed larceny"-achievement, there is a hand and two walkie talkies. Perhaps someone was trying to steal them, got caught and now Carver is beating him/her to death with the evidence!
Maybe Carlos was the one who asked Clem to commit lacreny, to steal Carver's walkie talkie and be a spy? since Clem would be the unsuspecting little girl to be a spy/thief (the quiet one).
That would be Carlos' first and final genius plan actually
