Like with The Wolf Among Us and Tales from the Borderlands i feel that the chances of a season 2 of Minecraft Story Mode are fairly slim as Telltale didn't sign a multi year deal with those games like the did with The Walking Dead and The Wolf Among Us, if they did want to make a second season it would require a new contract to make one which could take time to negotiate.
As Telltale are fairly busy for the foreseeable future and likely have other unannounced projects with other franchises i personally can't see a second season of Story Mode happening.

Dude! They just had a holiday break with broke into January's time.
Also writing an episode that will most likely Cannon Season 2, if there… more is Season 2 for that matter.
Building the episode up is also a major stage in production so it may take over a few months for them to make the episode.
Generally Telltale's games release at a 2 - 3 monthly bases so feel lucky.

Yeah, it's odd for them to go back to a long release for Episode 5 of Minecraft, but episodes 1-4 were released quickly and Telltale has expressed interest in several recent interviews that they are wanting to put more of a focus on prioritizing punctual episode releases like they used to prior to Walking Dead: Season 1. They've so far committed to a monthly schedule for Walking Dead: Michonne, but Episode 2 is not rated yet so I'm not sure how they is coming along.
However, my point is that Telltale is capable of monthly releases for episodes of a Season as that was their standard for all of their games prior to Walking Dead - and yes, Telltale worked on multiple games before Walking Dead too (and with a much smaller staff size). After Season 1, they started to prioritize the idea of revising episodes due to player feedback over punctual releases.
I agree that long waiting periods aren't helping anybody and you make a good point about a balance existing between good content and a reasonable schedule, but it seems like those days are coming to a close if Telltale's recent efforts to go back to monthly releases for episodes bears any fruit.

@TMOBCraftMode means that telltale doesn't release on Fridays they release usually on Tuesdays.
