EMI is best, strongest in the series. Most funny jokes, most beautiful art, coolest puzzles, most interesting storyline.
I'm not an Escape hater, but I agree that it is the weakest on the series. The controls didn't bother me either, but it definitely doesn't have the best storyline, the coolest puzzles or the most beautiful art.
After my recent playthrough of Escape, I have to say it's the weakest in the series, not necessarily for the plotholes or story errors (though the modern objects and jokes from the earlier games used as major plot points in this one was a bad move). No, it was because the GAME element of it is not as strong as the other games. I found the puzzles especially to be random and rather stupid at times. It wasn't Monkey Kombat that really bothered me (though it puzzled me to no end on my first playthrough), it was the fact that if you threw away all of your notes after beating Jojo Jr., you'd have no way of completing the final battle with LeChuck.
The control scheme was also the weakest of the series with it's keyboard controls and no way to interact with a mouse. The way to select objects and characters was very clumsy.
On the positive side though, it was a nice self-contained story, excellent music and some of the best voice-work in any video game ever made. Nobody gave a bad performance, except for MAYBE Neil Ross as the perfume salesman, but I'll let him off because of his wonderful voice for Wally in Curse.
So yeah, I think this is the order of my preferred Monkey Islands from Best to Worst:

Well, the CD version skipped the difficulty choice. There are a few cool moments in lite (such as escaping from LeChuck's fortress) but nothing I'd sorely miss. With the hint system I doubt they'd bother to include it, too much more work in terms of voice recording/testing for too little gain.

The copy protection screen is closely linked (code wise I guess) to the difficulty level choice screen, so when LCR was released on cd, Lucasarts made the game skip the copy protection screen, and by doing it, it also skipped the difficulty choice, leaving the hard mode as default.
As mentioned before, playing via ScummVM restores it, which is why you see the cracked copy protection screen when playing through it.

Im guessing there wont be a lite mode, the xbox achievments list was shown a while ago and I think if there was a lite mode they would have an achievment for finishing lite and another achievement for finishing "hard" mode, but there was no mention of lite on the achievements list.
At this stage, I don't think that lite mode will be in the special edition. Having said that though, the opening credits sequence hasn't been shown, but it will probably still be in.

I think the reason some people hate Escape is because they think it has some flaws unlike the other games which they believe are absolutely perfect games.
It's just a game, made by humans, made for humans. It was made in a certain time, with certain tools.
People can go on and on and on trying to justify why this is the worse game ever because it's flawed but that's awfully redundant and...shallow.
It's not perfect but realistically it's no worse a game than any other and it's better than most games today.
The game has character like any other. You either like it or you don't but the general slams on the game are a real bore and I don't think have any real substance any more.
The only real substantial thing here is that people have a opinion. but this is by far a horrible game.

I replay EMI on occasion. For some reason. I don't really replay the others that often.

Those controls weren't any better in GF; they were the only problem with that game. The content rocked but the controls were still annoying.
EMI had a lot of other problems (plot, characterization, puzzles) so it doesn't get a pass for having awkward controls.
