Why? Just because it wasn't in the original movie. That's why.
Because it sucks, that's why. The soundtrack is one of the big key deciding factors that add up to my liking of a movie. George ruined two of my favourite musical pieces in Jedi by removing that song and the ending song before the credits. They were catchy. I looked forward to those moments. Now they're replaced by...rubbish. Yeah yeah, different tastes and all that, but that's the memories I have of it when I was younger. I enjoyed those pieces. Now they're gone.
On a happier note, I've discovered an excellent fanmade creation called the Star Wars Hyperspace Edition. For those that are disappointed with the SE releases, give it a Google. That combined with the versions by Adywan alleviates much of my qualms on the whole matter.
They're not in the movie. Half the experience in enjoying it is in the movie. Many times the movie soundtrack mixes and arrangements are very different from the ones in the actual movie as well.

The DVD of The Lion King contained a completely optional additional musical scene, originally cut from the film but now animated from original storyboards. The voices were recorded during the original production of the film so it doesn't sound or look off, but the pacing crawls to a halt and the song doesn't really add much to the narrative, so it pretty much belongs cut. It's a similar thing to what they did with "Human Again" in Beauty and the Beast, where another cut song(that became really popular when it was kept in the Broadway play) was reinstated into the film. For both releases, you can watch the original cut or the new one with the additional footage.

Whoop-tee-flippin-do. As one of my friends put it, they put all this build-up, all this back story into this mysterious Boba Fett, and it all culminates in one moment: "Boba Fett? Boba Fett?! Where?!"
I have officially borrowed this from a friend, along with a VCR, and am soon to enjoy blissful THX Remastered but unedited Star Wars original trilogy DVD action.
I actually borrowed it for the purpose of saving some family stuff, but figure while I've got it...

an interesting fact:
If you watch the fullscreen version on a widescreen TV, all the actors look the same as they do today.... It's a fact.
Also, Hyperspace Collection. Nobody should be turning VHS tapes into DVDs when we have a fan effort like that.
