I cannot be bothered to create a custom video with all the Mario Kart tracks I've picked (I tried, but it was taking WAY too long), so here's the tracklist with videos made by other people showing off each track.
Bear in mind that all I've done is replace the tracks (and messed around with the menus), so the music for these tracks is usually wildly inappropriate. It does all work though, so yays for that.

Mushroom Gorge > Concord Town (due to me placing this track in slot 1.3, there's some fog on the long straight around the corner from the bridge, but it doesn't look particularly bad)

Dry Dry Ruins > SADX Twinkle Circuit (probably the only good thing about Sonic Adventure )
Moonview Highway > Halogen Highway (needs to be in this slot because of the cars)

Rainbow Road > NGC Rainbow Road (couldn't find another original 'space' track, so went with a classic)
NGC Sherbert Land > Penguin Cave
GBA Shy Guy Beach > GBA Lakeside Park (NOT a fan of this one, but any track that uses this slot [6.2] HAS to include the Shy Guy Ship that fires bombs onto the track, and very few custom tracks use that, so...)

I'm not so keen on the ones that are basically rips of levels from mario games. They look confusing! The rest all seem cool. I quite like the DKR ones, personally. Only Rareware could make such bland tracks so awesome. I mean, when you think about it most of the tracks in DKR were just ovals, or ovals with a slight kink!

Also, I'm quite happy to share the collection. It's in the form of a patch (to keep it nice and legal), and you need to run a batch file to make it compile whatever. I've been using it to create a custom .iso that I run in Dolphin, but apparently it also creates a CTGP-style setup you can run using Riivolution, so... yeah.
Well, I just finished Mario Kart 7 (star ranking on all cups, all speeds). And realised that the majority of the courses are incredibly generic. For example, the generic Ice race is called "Rosalina's ice world". What about it, precisely, makes it hers? Most of the races just feel like they've been shoe-horned into the mario theme, which doesn't really work.
I really wish they'd do Super Karting bros or something. To inject some fresh meet into the series. That way we can get Captain Falcon back, and I can stop feeling angry because MK8 means that F-zero is unlikely to return (the franchises could be seen by the larger market as too similar.)
Also, if I ever get round to homebrew (when I get a wii U, my wii will be my new toy to experiment with!), I'll give your compilation a shot!

Does Origin allow you to return a game if it doesn't work on you system? That's what I hate about PCs, and what puts me off getting a lot of games, like the steam version of Simcity 4.

EDIT: There's not a specific option for "It doesn't work on my system", but there's a couple of other options ("It's too buggy" being my personal favourite, with "I can't connect to servers" being a close second), and you can always select 'Other' and add in the exact problem as a comment. They'd probably be cool with it.
Bear in mind that if you actually play a game (or try to, anyway), you can only request a refund within 24 hours of first launching it. If you haven't even touched the thing, then you get 7 days. Be aware of this!

EDIT 3: I take everything back. They've given me a refund on my copy of Dead Space... and removed both copies. Fucking idiots. As opposed to Valve, who asks you 6 times if you want to remove it, has no clear support subtopic for refunding games, and if you want one game from a bundle removed they have to remove the whole bundle of it's tied to the same key.
