I've played Simon the Sorcerer 3D. I feel... unclean.
One of these days I'm going to do a bunch of reviews about game series that didn't make the leap to 3D. Simon will be on there, as will Earthworm Jim, the original Prince of Persia, and more. One day...

A bit harsh. I'd say most of the blame has to go to the publisher who insisted on it being 3D in the first place, after it had already been designed as a 2D game.
There definitely should be. But knowing Activision, I'm sure the executives there aren't exactly jumping at the chance to share revenue as part of a bundle with IP that is not owned by them.
I can highly recommend "The Book of Unwritten Tales"... one of the best adventure games I've played in the last couple of years. Don't know if the English version holds up regarding writing and voice acting, but the original German version was fantastic in those regards.
Yeah, love the English version voice acting for BoUT too. Glad the game will finally get to be played by more people, since it won several awards in the 2011 AdventureGamers.com annual Aggie awards, but since it was quite hard to get hold of, it doesn't seem to have been played by many people yet.

Sierra's Quest series? What's missing from GOG.com? They have all the King's Quests, all the Space Quests, all the Police Quests, and all the Quest for Glory games. That's all of them, unless I'm mistaken.

They're missing the official remakes of Space Quest 1 and King's Quest 1, the EGA version of Police Quest 1, and SWAT 4 (your mileage may vary on whether this counts as a PQ game). Also, they don't have Leisure Suit Larry at all.

Multiple versions would be nice, but they're not really necessary. They'd just be added on as extras to the games that are up there anyway.
Leisure Suit Larry isn't owned by Activision, it's owned by Codemasters. That would require a whole new licensing agreement.
Also, note on your first point, Ultima is owned by Electronic Arts (whereas most of the Sierra series are owned by Activision). EA re-releasing the games they own has no bearing on Activision releasing theirs (or GOG.com for that matter).
